Spicy Stewed Beef with Creamy Cheddar Grits

Maybe it’s because I am been feeling a bit run down recently, but I have been listening to a lot of country music, trying to feel connected back to my roots.  With this it got me researching a lot of southern comfort food recipes.  We all know the classic shrimp and grits (which I LOVE), but I came across this beef and grits recipe and was so intrigued by the combination of tastes that I knew I needed to make it.  With a long Memorial Day weekend ahead, I knew it was the perfect time to relax, disconnect and do some good home cookin’.

Now, I will say that you need to be a lover of spice because this is definitely spicy!  But the balance of the creamy cheddar grits and the spicy beef is pretty great! Enjoy!

Cuban Sliders

Whenever I see Cuban sandwiches, I think of my sister.  She loves Cuban sandwiches!  A few weeks ago my Dad was in town and we found a great Cuban restaurant as we were driving around the city.  I got a little inspired and started looking up recipes.  I know this isn’t a traditional Cuban, but any sandwich in the form of a slider makes everything a little better.  This recipe is definitely a keeper and so easy.

Sausage Stuffed Mushrooms

It’s been a whirl wind of a week.  It started off with another polar vortex and a two day off-site at the “Marketing The PepsiCo Way” training (not a fun time getting over to McCormick Place in -12 degree weather and even worse wind chills).  On the flip side though, if I ever visit Antarctica, I have learned the art of dressing in layers:  tights, winter running leggings, wool knee socks (thanks mom), wool dress, turtleneck, sweater, two scarves, fleece headband, two pairs of gloves, Uggs, long puffy jacket with hood – takes me a while to de-robe once I get to work.
