Spaghetti Pie

Recently I have been on a “tour de Klindt Family Recipes” so that I can 1. Indulge myself a bit and 2. Get all the recipes written and photographed to share with all of you!  This one was introduced to our family when my little brother was born (if I am remembering the story correctly).  A friend of my mom’s dropped off a frozen casserole of spaghetti pie to my parents to help them out a little bit when our family expanded to 3 kids (outnumbering our parents).  
It has been a stable ever sense.  For those out there that may feel your family dinners are in a bit of a rut, this is a great twist on the basic spaghetti night.  My FAVORITE part of this is the bottom of the casserole where the spaghetti has cooked together with the egg/parmesan/butter mixture.  You will understand when you try it…enjoy!


Ingredients:
2 Eggs (beaten)
1/4 Cup Butter
1/3 Cup Grated Parmesan Cheese
1 Large Cottage Cheese
1lb Ground Beef (or Turkey)
1 Small Jar Spaghetti Sauce
2 Cups Mozzarella Cheese
Spaghetti

Directions:
Brown ground beef until cooked.  Add spaghetti sauce to the meat.  While browning, cook spaghetti al dente.  In the bottom of a 9x13 baking dish combine eggs, melted butter and parmesan cheese.  Layer in cooked spaghetti, cottage cheese, meat sauce and mozzarella cheese in that order.  Cover with foil and cook at 350 degrees (30 minutes with foil on 30 minutes with no foil) – 1 hour total.
