I have been rather uninspired recently
with recipes (so please email me some good ones!). But, inspiration finally hit me when I was
looking through some old pictures of one of my favorite trips…Greece! I remembered falling in love with tzatziki
and eating massive amounts of it. Being
that it is summer and is hot (well some of the time it’s hot), I thought this
would be a great recipe to share. It is
SUPER simple, very fresh and good for you!
Ingredients:
1 small/Medium cucumber, peeled
16 oz (2 cups) Cold plain Greek yogurt
(I used Fage 2%)
2 cloves garlic, pressed
1/3 cup chopped fresh dill
1 1/2 Tbsp freshly squeezed lemon
juice
1/2 tsp Kosher salt, or to taste
1/8 tsp black pepper
Directions:
Peel the cucumber, seed it and finely
dice it. Squeeze the cucumber in a paper towel very tightly to strain it’s juices/water out. This will prevent the sauce from being watery the next day.
Combine all ingredients and stir
together. Let chill in the refrigerator
for an hour before serving…this helps chill and let the flavors come
together.
