Cranberry Relish

Each year when cleaning up after Thanksgiving dinner, I always seem to notice the cranberry side dish usually isn't touched much.  Does this sound familiar?  Well, Susan Crawford, one of my dearest friends, passed along a recipe that her family SWEARS by.  I haven’t posted any recipes that I haven’t tried myself, but since she is a close friend (and lover of cooking), I trust her judgment and taste buds.  Below is a fun recipe to try if you are looking for a new cranberry recipe!


Ingredients:
1 lb cranberries
2 apples, yellow golden or your favorite baking apple  (pared, cored, diced)
2 pears  (pared, cored, diced)
1/2 cup sugar
juice from 1 orange ( try for 1/2 cup)
1 T orange zest.  the peel grated
1 t cinnamon (more to taste)
2 T Cointreau or Gran Marnier

Directions:
Microwave all ingredients (except the liqueur) uncovered in a 2 quart
casserole on medium-high until mixture thickens
( 20 minutes - -maybe 30.)
Stir occasionally during cooking
Stir in liqueur
Refrigerate
